Variations on This Recipe

  • Change the vinegar. If you don’t have red wine vinegar, white wine vinegar or apple cider vinegar are also good options.
  • Switch up the fresh herbs. Use whatever fresh herbs you like or have on hand. Oregano is another one of our favorites.
  • Add onion to the marinade. Simply slice up half of a yellow onion and add it to the marinade.

London Broil Tips

Don’t Rush the Marinade

Around 8 hours is perfect, but you can also let this go for up to 2 days in the fridge.

Fresh Herbs Make a Difference

But if you don’t have fresh herbs, in a pinch you can use dried (use 1/3 of the amount, so 1 teaspoon dried herbs instead of 1 tablespoon fresh herbs).

You Can Cook London Broil on a Grill

Similar to cooking steak under a broiler, you can cook it on a grill (on high heat) until it reaches your desired level of doneness.

Is London Broil Tough or Tender?

The cuts of meat that are used to make a London Broil are typically on the leaner side. As a result, this can cause it to be tough and sometimes gamey if it’s not prepared and cooked correctly.

Does London Broil Have to be Marinated?

We highly recommend marinating this. When people complain that a London Broil is tough instead of tender and juicy, it’s usually because they didn’t marinate it, or didn’t marinate it long enough!

Does Vinegar Tenderize Meat?

Yes! Acid, such as vinegar or lemon juice help to break down and tenderize meat.

Can You Marinate London Broil Too Long?

For best results, we recommend marinating this for at least 8 hours, or up to 2 days.

If you marinate it longer than that, the meat can start to break down and it may have a vinegary flavor.

Should London Broil be Cooked Fast or Slow?

Because it’s a fairly lean cut of meat, we like to cook this fast over a very hot heat source.
